Just Say Cheese" We Got Cheese!! Gourmet Wisconsin Cheese


My name is Art Atkinson. I’m no expert on Cheese but I know what I like and I love Wisconsin cheese.

I have lived In Oregon for the last 45+ years where Tillamook Cheese ran supreme. I thought it was the best until I tried Wisconsin Cheese and boy was I hooked.

My favorite is Sharp Cheddar Cheese from Wisconsin were it is aged to perfection. Wisconsin produces the most Cheddar in the United States

A good table Cheese is Longhorn Colby, which is similar to cheddar, but does not undergo the cheddaring process. Colby Cheese is a softer, moister, and milder Cheese than Cheddar because it is produced through a washed-curd process.

Colby is considered semi-hard. Colby Cheese was developed in Colby Wisconsin in the 1800 hundreds.

The strong flavor develops over time, with a taste diverse enough that food packaging will usually indicate a strength ("mild" to "strong/sharp/mature/vintage"), or the maturation period. Chattering refers to an additional step in the production of cheddar-style cheese where, after heating, the curd is cut into cubes to drain the whey, then stacked and turned. Strong, mature Cheddar, sometimes called vintage, needs to be matured for up to 15 months. The cheese is kept at a constant temperature often requiring special facilities.

Like many cheeses, the color of Cheddaris often modified by the use of food colorings. In the United States and Canada, Annatto, extracted from the tropical achiote tree, is traditionally used to give Cheddar a deep orange color. The origins of this practice have been long since forgotten, but the three leading theories appear to be:

  • to allow the cheese to have a consistent color from batch to batch

  • to assist the purchaser in identifying the type of cheese when it is unlabelled

  • to identify the cheese's region of origin.

Another one of the most popular cheeses is mozzarella. While cheddar is a fairly firm cheese, mozzarella is its squishy white counterpart. It is used in many types of foods with Italian origins, including pizza, lasagna, and spaghetti.

Monterey Jack is a type of semi-hard cheese using pasteurized cows’ milk. It is commonly sold by itself, or mixed with Colby cheese to make a marbled cheese known as Colby Jack

 Another version called Pepper jack mixes hot peppers with Monterey Jack for a zesty flavor.
 Pepper jack is often used as an alternative cheese in dishes such as quesadillas, but can be eaten with bread or crackers as a snack.
